Turkey Cheddar Burgers



You can substitute cheddar for just about any cheese of your preference.  But.... there are times when cheddar is better....

Ingredients
 
For burgers
  • 1 large shallot, finely chopped (1/4 cup)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds ground turkey (not labeled "all breast meat")
  • 5 ounces extra-sharp Cheddar, cut into 4 (1/2-inch-thick) slices
  • 4 hamburger or kaiser rolls
For sun-dried tomato mayonnaise
  • 1/4 cup oil-packed sun-dried tomatoes, drained
  • 1 tablespoon water
  • 2 teaspoons cider vinegar
  • 1/4 teaspoon salt
  • 1/4 cup mayonnaise
  • Accompaniment: lettuce leaves
Directions

Make burgers:
Put oven rack in middle position and preheat oven to 350°F. 

Cook shallot in oil with salt and pepper in an 8-inch skillet over moderate heat, stirring occasionally, until golden, 2 to 3 minutes, then transfer to a bowl. Add turkey and mix gently but thoroughly. 

Turn out turkey mixture onto a sheet of wax paper and divide into 8 equal mounds. Pat 1 mound into a 4-inch patty and top with 1 piece of cheese, then put a second mound on top, patting it onto other patty to enclose cheese. Pinch edges together to seal and shape into a single patty. Make 3 more burgers in same manner. 

Heat an oiled well-seasoned ridged grill pan over moderately high heat until hot but not smoking, then grill burgers, turning over once, until just cooked through (no longer pink), 8 to 9 minutes total. 

While burgers are cooking, heat rolls on a baking sheet in oven until crusty, about 5 minutes. Transfer rolls to a rack to cool slightly. 

Make mayonnaise and assemble burgers:
Purée tomatoes with water, vinegar, and salt in a blender or mini food processor, scraping down sides as necessary, then blend in mayonnaise. 

Cut rolls in half horizontally (if necessary) and spread cut sides with tomato mayonnaise. 

Serve burgers on rolls with lettuce.

"Thai One On" Peanut Turkey Burger

Ingredients
Cucumber Relish
1/3 cup seasoned rice vinegar
1 tablespoon sugar
1 tablespoon minced carrot
teaspoon finely minced red onion
1 English cucumber
Burgers
½ cup finely chopped green onions
2 tablespoons peanut butter
2 tablespoons soy sauce
1 teaspoon sesame oil
1 garlic clove, minced
1 tablespoon chile paste with garlic
2 teaspoons grated peeled fresh ginger
1 ½ pound ground turkey
1 ½ teaspoons salt
6 Hamburger buns
6 curly red lettuce leaves
Oil for grill

Instructions
Make cucumber relish: In a bowl stir together vinegar and sugar until sugar is dissolved. Add minced carrot and red onion. Slice enough cucumber crosswise into 1/8-inch-thick slices to measure 1 1/2 cups and add to vinegar mix, tossing well. Marinate mixture at least 30 minutes and up to 3 hours.

Prepare grill. In a bowl mix green onions, peanut butter, soy sauce, sesame oil, chile paste, and ginger until thoroughly mixed. Add the ground turkey and salt and using your hands mix until just combined (do not overmix) and form into six 1-inch-thick patties.

Grill on a lightly oiled rack set 5 to 6 inches over glowing coals about 5 minutes on each side, or until just cooked through.

Lightly toast hamburger buns and transfer burgers to buns. Top each burger with lettuce leaf and drained cucumber relish. Serves 6.

Cumin Turkey Burgers



These cumin turkey burgers are very flavorful and packed with some heat!

Ingredients

  • 1 egg
  • 2 jalapeno peppers, seeded and minced
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup Worcestershire sauce
  • 2 teaspoons ground cumin
  • 1 teaspoon mustard powder
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 cup dry bread crumbs
  • 1 1/2 pounds ground turkey
  • 6 hamburger buns, split and toasted

Directions

  1. Mix the egg, jalapeno peppers, and garlic in a large mixing bowl until the egg is well blended. Add the soy sauce, Worcestershire sauce, cumin, mustard, paprika, chili powder, salt, bread crumbs, and turkey; mix well and form into 6 patties.
  2. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  3. Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve on the toasted hamburger buns.

Garlic and Ranch Turkey Burgers



In honor of the groundhog not seeing his shadow and hopefully only 6 more weeks of winter, a yummy and light turkey burger

Ingredients

  • 1 pound ground turkey
  • 1 (1 ounce) package ranch dressing mix
  • 1 egg
  • 3 cloves garlic, minced
  • 1/4 cup Worcestershire sauce
  • seasoned salt and pepper to taste
I like to add provolone cheese, red onion and some greens for garnishment

Directions

  1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  2. Knead together the turkey, ranch mix, egg, garlic, Worcestershire sauce, seasoned salt, and pepper in a bowl until evenly combined; divide into 4 equal portions and form into patties.
  3. Cook on the preheated grill about 5 minutes per side for well done. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).

Better Burger with Green Olives

This is a healthy alternative to beef or pork and an interesting combination of flavors.  The olives really add to the flavor and texture of the ground turkey

Ingredients

  • 1 pound lean ground turkey or beef (at least 90 percent lean)
  • 1/2 cup coarsely chopped pitted green olives (2 ounces)
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon freshly ground pepper
  • Cooking spray

Directions

Combine the turkey or beef, olives, parsley, cumin, and pepper in a mixing bowl and mix until well incorporated. Shape into 4 burgers.
Spray a grill pan with cooking spray and preheat over a medium-high heat or prepare an outdoor grill. Cook for about 5 minutes on each side, until cooked through. 

Serving suggestion: Serve on whole-wheat buns, garnished with slices of tomato and lettuce, with ketchup and mustard on the side.

Casablanca Bisteeya Burgers

Ingredients

For the Zesty Lemon Mayonnaise:

  • 3/4 cup mayonnaise
  • 2 lemons, zested

For the Patties:

  • 1 1/2 pounds ground turkey
  • 2 eggs
  • 1 cup finely ground almonds
  • 2 tablespoons chopped fresh ginger
  • 2 teaspoons ground cinnamon
  • 1 tablespoon chopped garlic
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper

For the Sweet Saffron Onions:

  • 4 tablespoons butter
  • 2 large onions, sliced into thin half-rounds
  • 2 pinches saffron
  • 1 teaspoon kosher salt
  • 2 tablespoons sugar
  • Vegetable oil, for brushing on the grill rack
  • 6 brioche rolls (hamburger bun size), split

Directions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

For the mayonnaise:

Combine the ingredients in a small bowl. Refrigerate until serving.

For the patties:

Combine the turkey and eggs in a large bowl. Add the almonds, ginger, cinnamon, garlic, salt and pepper. Combine, mixing gently so that the meat does not get compacted. Divide into 6 equal portions and gently shape into patties that equal the size of the rolls. Refrigerate until grilling.

For the onions:

Heat the butter in a medium-sized fire-proof skillet on the grill. Once the foam subsides, add the onions, saffron and salt. Sprinkle with the sugar and saute until golden brown, 5 to 8 minutes. Cover and set aside.
When the grill is ready, brush the grill rack with oil. Place the patties on the rack, cover, and grill approximately 4 minutes, until golden brown on the bottom. Turn the patties gently and grill an additional 4 minutes, or until the meat reaches an internal temperature of 165 degrees F on an instant-read thermometer. Remove from the grill and let rest tented with foil, about 3 minutes.
While the patties rest, place the rolls, cut side down, on the grill and toast lightly, about 2 minutes.

To assemble the burgers:

Thinly spread the roll tops and bottoms with the mayonnaise, place the patties on top of the roll bottoms, and top the patties with equal portions of the onions. Add the roll tops and serve.

Butter Burgers - Decadent!


Preparation Time: 5 minutesCook Time: 10 minutesServings: 4Milwaukee's great flavors include wursts and sausages of every kind, dreamy custard, fish fries, and wondrous German, Czech, Polish, and Serbian dishes found in few other cities in America. Milwaukee also happens to be hamburger heaven, its unique specialty the butter burger. This recipe calls for 6-8 tablespoons, but as the accompanying picture (of a butter burger -- with cheese -- from Solly's Grille) shows, there is no such thing as too much butter on a Milwaukee butter burger.


Ingredients:
1 pound lean ground hamburger meatsalt6 bunscondiments to taste6-8 tablespoons butter, soft enough to spread1/2 to 1 cup chopped onions (optional)


Directions:
Form hamburger meat into 6 round patties 1/4 to 1-/2-inch thick. Dust with seasalt.
Prepare the insides of the tops of the buns with whatever condiments you want on the burgers. Spread the bottoms of buns with butter, using up about half of the total amount of butter.
On a grill or in a heavy skillet, melt the remaining butter over medium-high heat. If you want grilled onions on your burgers, toss in the onions and cook them until just barely soft; then scoot them to the side of the pan. Fry hamburgers on both sides until cooked to desired degree of doneness, about 3 minutes total for quite rare up to 6 or 7 minutes for well-done. Move the hot burgers onto the prepared bun bottoms, so heat from burger melts the butter on the bun. Serve immediately.

Texas Chili Burgers


These Texas Chili burgers have the chili flavors in the beef patties and should be topped off like a bowl of nachos. Makes 4 Texas Chili Burgers.



Ingredients:

  • 1 pound ground beef or ground turkey
  • 1/2 small onion, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon oregano
  • 4 burger buns
****OR for a quick recipe use 1 package of Chili Powder Mix

Method:

  • Combine the beef, minced onion, chili powder, cumin, lime juice, garlic and oregano in a large bowl and mix well.
  • Shape the mixture into 4 patties and Broil or Grill them for around 4 minutes on each side or until the meat is cooked through.
  • Serve on regular burger buns and top with your choice of refried beans, chopped onion, jalapenos, nacho cheese and salsa.

Tex-Mex Burgers Texotic-Mexotic Burgers




These are AMAZING!

SERVES 20 , 40 mini appetizers (change servings and units)

Ingredients

Caramelized Adobo onions

Tomato and Avocado Salsa

TEXotic-MEXotic BURGERS

Garnishes

Directions

  1. Caramelized Adobo Onions:.
  2. Heat the oil over medium high heat.
  3. Add onions and reduce the heat to medium-low.
  4. Cook slowly, stirring occasionally, until golden brown and caramelized, about 20 minutes.
  5. Add the salt and pepper to taste, sugar and adobo sauce stir well to combine.
  6. Meanwhile make Tomato and Avocado Salsa:.
  7. Add all ingredients from the salsa using 1/2 the cilantro and parsley and added the 1/8 cup finely mined onion. Chill till ready to serve.
  8. TEXotic-MEXotic BURGERS:.
  9. Preheat oven to 375°F.
  10. Mix all burger ingredients together including the remaining cilantro and parsley. Make burgers using 1 tablespoon full of meat mixture.
  11. Place on a cookie sheet pan and bake for 5-10 minutes. Don`t overcook.
  12. Meanwhile place chips on serving platter topping with just a tad of refried beans (used just to hold the mini burgers on).
  13. Remove burgers from oven and place on beans be sure to get the cheese that oozed out (go ahead sneak some for yourself ;) ), topping with a tad of sour cream, Caramelized Adobo Onions, and salsa.
  14. Enjoy these finger licking good burgers!
  15. Alternate: Yes you can make regular sized burgers just bake a bit longer till desired doneness.

Poor Man's Hamburger Steaks



Perfect recipe in this economy!

"An old fashioned hamburger steak recipe topped with cream of mushroom. Serve with some warm mashed potatoes and your favorite green vegetable or salad.

INGREDIENTS (Nutrition)

  • 3 pounds ground beef or ground turkey
  • 25 saltine crackers, crushed
  • 1 cup milk
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 3 (10.75 ounce) cans condensed cream of mushroom soup
  • 1 (8 ounce) can mushrooms, drained (optional)

DIRECTIONS

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
  3. Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

Surprise Burgers


At first I thought the "Surprise Burger" would be too sweet but we really enjoyed it! I would have never thought to sneak a pineapple ring inside the burger. These burgers are messy but tasty.

Here's the recipe - serves 4:

INGREDIENTS:
  • 1 pound lean ground beef
  • 4 pineapple rings
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1 tablespoon prepared yellow mustard
DIRECTIONS:
  1. Preheat a grill for high heat.
  2. Divide the ground beef into four portions, and form patties around pineapple rings so that none of the pineapple is showing. In a small saucepan, mix together the ketchup, brown sugar, and mustard. Heat until sugar is dissolved. Set aside.
  3. Place burgers on the grill, and cook for about 5 minutes per side, or until well done. Spoon some of the brown sugar sauce over the burgers before serving.

Double Brie Burger



My daughter, Andy has been craving Brie lately so I decided to try Brie Burgers - Andy LOVED them! The cheese oozes with just about every bite. Very easy and simple recipe.


Brie lovers will flip for this super cheesy burger. Brie is added to the ground meat mixture, grilled and then topped with another slice of brie. Serve with crusty bread or baguettes and a tomato, red onion and avocado salad.

Makes 4 burgers

Ingredients:

1 pound ground sirloin or your favorite ground beef
2 ounces brie, chopped
Salt and freshly ground black pepper
8 thin slices Brie






Directions:
  • Mix the ground meat, chopped Brie and salt and pepper. Using your hands, form 4 large burgers, making sure that the brie is on the inside of the burger.
  • Preheat a charcoal or gas grill until red hot. Grill the burgers about 4 minutes. Gently flip the burger and grill another 3 to 4 minutes, depending on whether you like your burger rare or medium rare. Top each burger with 2 slices of brie and cook another minute or until the cheese is just melted. Makes 4 large burgers.

Ranch Burgers



Here's another quick trick for yummy burgers - for burgers with extra pizazz, combine 2 pounds of ground beef with one envelope of Hidden Valley Ranch salad dressing mix. Let the mixture set in the refrigerator for 30 minutes before cooking.

Jack-o'-Lantern Burgers



These burgers are fun, festive and tasty. Adding the onion soup mix is one of my favorite stand-by burger ingredients but the horseradish and chili powder really gives this burger a kick!

Ingredients:

  • 1 envelope onion soup mix
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons prepared horseradish
  • 2 teaspoons chili powder
  • 2-1/2 pounds ground beef
  • 10 slices process American cheese
  • 10 hamburger buns, split

Directions:

In a large bowl, combine soup mix, ketchup, brown sugar, horseradish and chili powder. Crumble beef over mixture; mix well. Shape into 10 patties. Grill, broil or pan-fry until the meat is no longer pink.
Cut eyes, nose and mouth out of each cheese slice to create a jack-o'-lantern. Place cheese on burgers; cook until cheese is slightly melted, about 1 minute. Serve on buns.
Yield:
10 servings.

Onion Soup Burgers - FAVORITE!















Onion Soup Burgers are one of my favorites. They are quick, easy and tasty. Mini or full sized burgers.


INGREDIENTS:

1 package Lipton Onion Soup Mix
1 1 lb ground beef or ground turkey
1/4 cup shredded cheese, cheddar, Swiss, American, etc...
buns
condiments of choice

DIRECTIONS:

1. Mix meat, onion mix and cheese in a bowl. Refrigerate for at least 30 minutes to let flavors absorb
2. Form into patties - mini burgers or full sized
3. Coat frying pan with oil, heat up - or heat up the frill if you are grilling
4. Fry burgers approx 5 minutes each side
5. Serve on buns, dress with favorite condiments

Sweet Onion Burgers


"Sweet Onion Burgers" just sound good! These sweet onion burgers are very simple, a few ingredients and very tasty.

INGREDIENTS:


1. 1 large sweet onion, chopped - Vidalia Onion
2. 1 lb ground beef or ground turkey
3. salt & pepper to taste
4. favorite condiments

DIRECTIONS:

1. If grilling, preheat grill to high heat. If stove top, put a coat of oil in a frying pan - after meat is mixed
2. In a large bowl, mix together meat, salt & pepper and form into patties
3. If using the grill, lightly oil the grate and place burgers on grill. If stove top, put burgers in the heated frying pan.
4. Cook until desired "done-ness"
5. Serve on hamburger buns or english muffins - toasted

Gorgeous George Burger - Healthy Version




This is a healthier version of a burger served at Gwyn's High Alpine Restaurant in Snowmass, Colorado. The original, named after restaurant owner George Gordon, is topped with pineapple and bacon





This burger can also be prepared with beef or turkey chopped meat



INGREDIENTS:


1 10-ounce package frozen soy burgers
3 tablespoons canned vegetable broth
1 8-ounce can pineapple slices (juice pack)
1/2 of a medium red onion, sliced
4 whole wheat hamburger buns, split
4 slices fat-free process or reduced-fat Swiss cheese (4 ounces)
4 tablespoons bottled fat-free thousand island salad dressing
4 leaves leaf lettuce



DIRECTIONS:


For a charcoal grill, grill burgers on the rack of an uncovered grill directly over medium coals for 8 minutes, turning once halfway through grilling and brushing with vegetable broth several times.


Add pineapple and onion slices to grill for the last 3 minutes of grilling time, turning once halfway through grilling. Add bun, split side down, to grill for the last 1 minute of grilling time. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover and grill as above.)
Serve burgers on grilled buns, topped with pineapple, onion, cheese, salad dressing, and lettuce.

Chile Mint Burgers



Fresh mint and yogurt-cucumber sauce cool off this spicy burger!

INGREDIENTS

  • 1/2 cup finely chopped onion
  • 1 fresh serrano or jalapeno chile pepper, seeded and finely chopped,* or 2 tablespoons canned diced green chile peppers
  • 1 tablespoon chopped fresh mint or 1 teaspoon dried mint, crushed
  • 3/4 teaspoon ground cumin
  • 1 clove garlic, minced (1/2 teaspoon minced) or 1/8 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1 pound lean ground beef or uncooked ground turkey breast
  • 2 whole wheat pitas, halved
  • 1/4 cup Yogurt and Cucumber Sauce - **Tsatziki
DIRECTIONS

1. In a medium bowl combine onion, chile pepper, mint, cumin, garlic, and kosher salt. Add the meat; mix well. Shape into four 3/4-inch-thick patties.

2. For a charcoal grill, place patties on the rack of an uncovered grill directly over medium coals. Grill for 14 to 18 minutes or until meat is done (160 degrees F for beef; 165 degrees F for turkey), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover and grill as above.)

3. Serve each patty in a pita half with 1 tablespoon of the Yogurt and Cucumber Sauce. Makes: 4 servings

*Note: Because hot chile peppers contain oils that can burn your skin and eyes, wear rubber or plastic gloves when working with them. If your bare hands do touch the chile peppers, wash your hands well with soap and water.

Broiler method: Place patties on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 14 to 18 minutes or until meat is done (160 degrees F for beef; 165 degrees F for turkey), turning once halfway through broiling.


**Tsatziki

2 Cups Yogurt
1 Cucumber - grated, seeded and peeled
1/2 Lemon - juice only
1-2 Gloves Garlic - minced
1 tspn Salt

Red River Burgers



INGREDIENTS

  • 1/2 cup chopped green onion or finely chopped white onion
  • 2 tablespoons fine dry bread crumbs
  • 2 red serrano peppers, seeded and finely chopped
  • 3 canned chipotle peppers in adobo sauce, chopped
  • 1/2 teaspoon salt
  • 1 pound lean ground beef or ground turkey
  • 4 whole wheat hamburger buns, split, or eight 1-inch-thick slices of bread
  • Roasted red pepper catsup, roasted garlic catsup, or other purchased flavored catsup (optional)
  • 4 tomato slices (optional)
  • Sliced red onion (optional)
  • Red serrano peppers (optional)
  • Garlic/Kosher pickle on the side

DIRECTIONS

1. Combine green onion or white onion, bread crumbs, serrano peppers, chipotle peppers, and salt in a large mixing bowl. Add beef; mix well. Shape meat mixture into four 3/4-inch-thick patties.

2. For a charcoal grill, place patties on the grill rack directly over medium coals. Grill, uncovered, for 14 to 18 minutes or until an instant-read thermometer inserted into the side of a patty registers 160 degree F, turning once.

3. For a gas grill, preheat grill. Reduce heat to medium. Place patties on the grill rack; cover and grill as above.

4. Grill or toast buns or bread. Serve burgers on grilled or toasted buns or bread topped, if desired, with flavored catsup, tomato slices, red onion slices, and serrano peppers. Makes 4 servings.

Thai Turkey Burgers





INGREDIENTS


1/4 cup refrigerated or frozen egg product, or 1 egg, beaten
1/4 cup fine dry bread crumbs
1 teaspoon Thai seasoning or curry powder
1 pound uncooked ground turkey breast
6 whole grain cocktail-size hamburger buns, split and toasted
3/4 cup fresh basil leaves
2 tablespoons purchased peanut dipping sauce
1 medium mango, pitted, peeled, and sliced



DIRECTIONS

1. In a medium bowl, combine egg product or egg, bread crumbs, and Thai seasoning or curry powder. Add ground turkey breast; mix well. Shape into six 3/4-inch-thick patties.


2. Place patties on the greased rack of an uncovered grill directly over medium goals. Grill for 14 to 18 minutes or until done (165 degree F),* turning once.


3. To serve burgers, top bottom half of each bun with some of the basil. Add patties. Spoon peanut dipping sauce over patties; add mango slices and bun tops. Makes 6 servings.


*Note: The internal color of a burger is not a reliable doneness indicator. A turkey patty cooked to 165 degree F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.
